Ingredients –
1. Ripe avocado –1 no
2. OrganicRatnagiri mango – 1 no
3. Pine nuts – ¼cup
4. Lime juice – 1tablespoon
5. Salt – to taste
6. Chili flakes –to taste
7. Extra virginolive oil – 1 tablespoon
8. chopped redRubin basil -1 tablespoon
9. Microgreens –for garnish
To start –
1. Ina small skillet, toast the pine nuts over medium heat until golden brown,stirring frequently to prevent burning.
2. Removefrom heat and set aside to cool.
3. Inthe large bowl, combine the avocado, mango, toasted pine nuts and chopped redRubin basil.
4. Drizzlelime juice and extra virgin oil over the salad and season with salt and redchili flakes.
5. Garnishwith microgreens and serve as light lunch option.
